What is your homemade pad thai recipe if you don't mind me asking :)

Sauce:

1/4 cup light soy sauce
1 tbsp Sriracha
1/2 tbsp brown sugar
1 tsp lemongrass powder (optional)
(traditional Pad Thai recipes use tamarind and/or fish paste, but I didn’t have any)

Noodles:
2 ounces dry medium size rice noodles
1/2 block firm tofu (shrimp or chicken if you prefer)
2 cloves garlic
1 small yellow onion
1 green onion
2 tbsp vegetable oil
Handful of basil, chopped
Handful of cilantro, chopped
1 lime
Ground peanuts (optional) 
Salt & pepper to taste

Cover dry rice noodles with warm water and let soak for 20-30 minutes until al-dente.

Meanwhile, heat vegetable oil in a wok, add chopped garlic and saute for 1 minute on medium. Add chopped yellow onions and saute for 2 minutes. Add sliced tofu, sliced green onion, salt & pepper to taste and pan fry until golden brown.

Add softened rice noodles and sauce, and stir fry on medium-high heat until noodles absorb the sauce.

Add a squeeze of lime juice, stir in basil and cilantro and serve immediately or let rest in pan for an extra 5 minutes if you like your noodles crispy. Garnish with extra cilantro, ground peanuts and lime wedges. Makes 1 serving.

Apple Cider Cups
Wash and dry the apples. Make sure to thoroughly dry the apples. You don’t want the apple to slip out of your hand! Using a sharp knife, carefully trace a center around the edge of the apple and use a spoon to scoop out the insides.Ingredients12 apples (Granny smith, gala, Red delicious), insides only1 orange, cut into quarters1/2 cup brown sugar2 cinnamon sticks (more for garnishing)1/2 nutmeg1/2 Tbsp cloves1/2 Tsp whole allspiceWater, to cover the apples


Set aside the ‘apple cups’. You can sprinkle lemon juice over the apples to prevent browning. 
Bring the apple pulp, water, orange quarters, brown sugar, cinnamon sticks, nutmeg, cloves, and whole allspice to a boil. 
Stir occasionally and allow to simmer for 2 hours.
Using a potato masher or a fork, mash the apples and oranges until soft. 
Allow the cider to come to room temperature before straining.
Pop the apple cups in the oven or fridge to serve warm or chilled. Garnish with a cinnamon stick, which doubles as a stirring stick.

3 Ingredient Homemade Chocolate Hazelnut Lara Bars
Finally tried these, love them. 
Ingredients:1 cup Dried Dates1/4 cup Hazelnuts2 tbsp Cocoa Powder1/2 tsp Sea Salt (optional)
Blend all ingredients using a food processorShape and cut into barsRefrigerate until firm

2 pints strawberries, hulled and sliced1/2 cup sugarjuice of 1/2 lemon1 cup creamy vanilla yogurt1 cup 2% Greek yogurt

Directions:

Combine the strawberries, sugar and lemon juice in a saucepan and bring to a boil over medium heat. Adjust sweetness if necessary with more sugar. When the sugar is dissolved, lower heat to a simmer and let it cook for about 5 minutes. Remove from heat and chill until completely cool.
Take 1/2 of the sauce and stir together with the vanilla yogurt and Greek yogurt. Pour into the pre-frozen bowl of your ice cream maker and churn for about 30 minutes, or until it has achieved a thick, frozen yogurt consistency. Enjoy immediately or store in a tightly sealed container in the freezer. Serve with remaining strawberry sauce.
