Strawberry Frozen Yogurt
from Kitchen Confidante

Ingredients:

2 pints strawberries, hulled and sliced
1/2 cup sugar
juice of 1/2 lemon
1 cup creamy vanilla yogurt
1 cup 2% Greek yogurt

Directions:

Combine the strawberries, sugar and lemon juice in a saucepan and bring to a boil over medium heat. Adjust sweetness if necessary with more sugar. When the sugar is dissolved, lower heat to a simmer and let it cook for about 5 minutes. Remove from heat and chill until completely cool.

Take 1/2 of the sauce and stir together with the vanilla yogurt and Greek yogurt. Pour into the pre-frozen bowl of your ice cream maker and churn for about 30 minutes, or until it has achieved a thick, frozen yogurt consistency. Enjoy immediately or store in a tightly sealed container in the freezer. Serve with remaining strawberry sauce.

Product Review Time: Pure Chocolate Brownie Bars
I’m obsessed. Most “health” bars out there are dry and artificial, but these Pure bars are organic, vegan and amazingly tasty for a wannabe-brownie. They’re very fudgy - you may not be a fan if you like cakey brownies - and packed with nuts. I have no idea how they managed to make such simple ingredients taste like a fudgy brownie but I’m not complaining.
So if you’re craving a brownie but don’t want to splurge on calories or fat, try one out!
Nutrition Info: 1 bar

Red Mango Frozen Yogurt with Strawberries & Mochi

Red Mango Frozen Yogurt with Strawberries & Mochi

I LOVE Ben&Jerry’s Chunky Monkey ice cream. Creamy banana ice cream embedded with chocolate chunks and walnuts…mmmm.

But at 300 calories and tons of fat, saturated fat, and sugar for a 1/2 cup serving, it’s definitely a once in a while treat. Here’s a healthier alternative to get the same Chunky Monkey taste, with half the fat and sugar.
Not-So-Chunky Monkey Ice Cream
3 frozen, peeled, and chopped bananas
1/4 cup chopped walnuts
2 tablespoons chocolate chips (I use dark chocolate shavings)
Optional: 2 tablespoons peanut butter or coconut
Place frozen bananas in a food processor and blend until smooth. Stir in or top with walnuts, chocolate and peanut butter. Serve immediately. Makes 2 servings.
