I LOVE Ben&Jerry’s Chunky Monkey ice cream. Creamy banana ice cream embedded with chocolate chunks and walnuts…mmmm.
But at 300 calories and tons of fat, saturated fat, and sugar for a 1/2 cup serving, it’s definitely a once in a while treat. Here’s a healthier alternative to get the same Chunky Monkey taste, with half the fat and sugar.
- 3 frozen, peeled, and chopped bananas
- 1/4 cup chopped walnuts
- 2 tablespoons chocolate chips (I use dark chocolate shavings)
- Optional: 2 tablespoons peanut butter or coconut
Place frozen bananas in a food processor and blend until smooth. Stir in or top with walnuts, chocolate and peanut butter. Serve immediately. Makes 2 servings.
